  • Step 1

    Take a pan and add chicken breast, water, kosher salt and half of the lemongrass. Let the mixture boil for a while and then let it simmer for about 20 minutes. Remove from heat and keep the chicken aside and let it cool down. After this, chop the chicken into 1/2 inch cubes and refrigerate for about 1-2 hours.

    Chop the garlic, basil, cilantro and slice the onions in a bowl. Take a pan and add chopped garlic, remaining lemongrass and chili powder with oil and saute for about 2- 3 minutes. After this, toss the celery, sliced onions, mint, chopped basil and chopped cilantro. Combine the chicken pieces with sauteed garlic mixture and the salad components. Prepare a base from lettuce leaves. Season it with salt, lime juice and honey and place on the lettuce bed. Enjoy!
