Whole Wheat Ladi Pav Recipe

In Maharashtra, Vada Pav and Pav Bhaji are two of the most popular foods that you can enjoy anytime, and they are mouth-watering. However, the pav you eat is not healthy and is made of all-purpose flour or maida. So, to make the dishes nutritious, I have curated a pav called Whole Wheat Ladi Pav, which is made with whole wheat flour, milk powder, lukewarm milk, and activated yeast.

  • Step 1 Activate the yeast

    First, dissolve sugar in warm milk. To this, add the yeast, cover and let it rest for 10 minutes. After 10 minutes, it will look frothy, hence ready for use.

  • Step 2 Knead the dough and let it rest for 1 hour

    Sieve together whole wheat flour, milk powder, sugar, salt and yeast in a bowl. Add activated yeast to it. Gradually add warm water and knead into a soft sticky dough. Slowly add the ghee and keep kneading for 15 minutes. Make a round ball of the dough and let it rest for 1 hour for proofing (till it doubles)

  • Step 3 Knead the dough again after an hour

    After one hour, knock off the air. Knead again by stretch and fold method for 5 min. (Note: You can use a little ghee if needed)

  • Step 4 Make equal balls of the dough

    Now, roll the dough into a cylindrical shape and make 15 equal balls of the dough. Next, grease the tray in which the pav is to be baked.

  • Step 5 Rest the balls in baking tray another hour

    Place each ball on the greased tray and leave a gap in between 2 pavs. Rest the dough again for 1 hour for 2nd proofing (till it doubles).

  • Step 6 Bake the pav for 15 minutes

    Bake the pav in a preheated oven at 190° C for 15 minutes. Then for browning on the top, bake again at 200° C for 5-10 minutes (Note: Keep checking the colour).

  • Step 7 Remove the tray from oven and cover with a wet cloth if the crust is hard

    Once done, remove the tray from the oven. (If the top crust is hard, cover it with a wet cloth for 5-10 minutes and before doing that, check the softness of the pav)

  • Step 8 Brush with melted ghee and enjoy

    When the crust is soft, remove it from the tray and brush it with a little milk or melted ghee. Enjoy with batata wada, bhaji or simply spread a little butter and jam, and enjoy.
