Schezwan Fried Rice and Chilli Paneer Recipe
This paneer schezwan recipe is simple, easy, and quick to prepare if you have paneer and Schezwan sauce ready. This is a gravy version and goes very well with veg fried rice or veg noodles. I had made Chinese veg rice, so I made the paneer schezwan gravy to go along with it.
This is a spicy recipe as along with schezwan sauce, even green chilies are added. You can control the amount of schezwan sauce or green chilies you want to add and make a less spicy version.
Do use a good quality schezwan sauce for the recipe. The final taste and flavor of this recipe depend largely on the schezwan sauce added.
You can serve with paneer schezwanWith burnt garlic fried rice or Hakka noodles or 5 spice rice.

Step 1 Cook rice
Wash rice 2-3 times properly and let it cook till it's almost cooked. Take it off the stove and rinse it under cold tap water immediately. Strain the rice & add a little bit of olive oil and mix well.

Step 2 Prepare schezwan rice
Take chopped ginger, garlic, and green chilies and add them to the oil. Add one medium-sized chopped onion in the oil and saute till it becomes pink. Add one small-sized carrot and medium-sized capsicum (chopped) in the oil and stir for 2 mins.

Step 3 Add rice and mix well
Add soya sauce, 5-6 tbsp chili sauce, 2-3 tbsp tomato sauce and mix well. Add the rice to this mix & add the schezwan rice masala to the rice and mix well. Add salt to taste and a tsp of red chili powder. Stir well & serve hot.

Step 4 Make the batter for paneer
Cut cubes of capsicum, onion, and paneer according to your choice of size. Chop ginger, garlic, and green chilies finely. Take paneer in a bowl and add two spoons of flour, a tsp salt, a tsp pepper, a tsp soya sauce, a tsp red chili powder. Add some water and mix it well with paneer to form a thick batter.

Step 5 Saute the veggies
Coat paneer cubes in the batter and fry it in hot oil. Take a flat pan, add oil and saute ginger, garlic, and green chilies for a min. Add onion and capsicum in it with a tsp soya sauce and saute well on high flame. Add four tbsp chili sauce, two tbsp tomato sauce, salt, and pepper to taste. Mix it well with the vegetables and add four cups of water.

Step 6 Make the final touches to the gravy and serve
Let the water boil meanwhile add a tbsp Cornflour powder in a small cup with one tbsp water and make a thick mixture. Add the mixture to the gravy and simmer it at low flame for 3-5 mins. Add fried paneer cubes and serve hot with rice.
Tips:
Serve paneer schezwan recipe with veg fried rice or veg noodles. You can garnish with some spring onion greens while serving.
