Mandarin Quinoa Salad Recipe

- 1/2 sliced beetroot
- 1/2 handful cottage cheese

Step 1 Simmer and cook the quinoa for 10-15 minutes
To prepare this scrumptious salad, take a saucepan and add uncooked quinoa and water into it. Bring the water to boil over medium heat and then reduce the heat to the lowest. Simmer the quinoa for a good 10-15 minutes or until the water is fully absorbed by the quinoa and turn off the flame.

Step 2 Prepare the salad dressing
Take a small bowl, drain out the juice from 1 mandarin orange. Keep it aside only to be used later as a part of dressing for the salad.

Step 3 Toss quinoa with oranges and dried cranberries
After the quinoa is completely cooked, transfer it to a large bowl and add the other mandarin orange (chopped), sunflower seeds, and dried cranberries. Gently toss the mixture as the mandarin oranges are very delicate and may break.

Step 4 Prepare the salad dressing and pour over the salad
To prepare the dressing for the salad, keep the mandarin orange juice as a base, add honey and extra virgin olive oil along with a dash of salt. Stir the liquid nicely and pour over the prepared quinoa-mandarin salad and give it a nice toss. Garnish with beetroot slices, crumbled cottage cheese and refrigerate the salad and serve it chilled!

To accentuate the taste of this salad you can sprinkle some roasted nuts and dry fruits.
