Step 1 Roast the amaranth seeds on low flame
To make your very own Rajgira Kheer, take a pan and heat it over a low flame. Then slowly add the amaranth seeds (Rajgira) to this pan. When all the seeds pop up then take them out of the pan on a plate.

Step 2 Cook amaranth seeds in milk
Now take a heavy-bottomed pan and pour milk in it, bring it to a boil. Once the milk has boiled, put sugar in it and stir while it gets dissolved in the milk. Then add the prepared amaranth seeds in the milk and continue to cook at a medium flame. Make sure to stir time and again.

Step 3 Add all the dry fruits and cook the kheer for 15-20 minutes.
Cook this milk and amaranth seeds for another 10-12 mins. Make sure the seeds are cooked. Then, add chopped almonds, cashews, raisins, and cardamom powder. Simmer for about 5-6 mins.

Step 4 Garnish and serve
Garnish the kheer with pistachios and serve.
