Basanti Pulao Recipe

  • Step 1 Soak the rice in a pot full of water for 30 minutes

    To make this yummy recipe, wash and rinse and basmati rice thoroughly. Soak the rice in a pot full of water for about 30 minutes. (Note: This recipe is traditionally prepared with gobindobhog rice. However, if it is not available, you can use basmati rice instead.)

  • Step 2 Stir-fry all the spices in a saucepan

    In the meanwhile, heat ghee in a saucepan. After the ghee heats up, add raisins and cashew nuts to the saucepan and stir fry them over a high to medium flame until slightly golden brown in colour. Then add cardamom, cinnamon stick, bay leaf, and cloves to the saucepan and fry for a while.

  • Step 3 Add rice and water to the spices and simmer until the rice is cooked

    Further, drain the rice (Step 1) and add it to the saucepan with the spices. Add water, saffron, and sugar to the rice and reduce the flame to the lowest. Simmer the rice until the water is completely absorbed and rice is cooked. Remove from heat and fluff the rice with a fork. If you like, you can play around with different garnishments such as almond slivers, pistachios, and saffron threads to make your dish even more delightful and attractive to devour.
