  • 30 ml vegetable oil

  • Step 1 Prepare the machbous spice

    To prepare this yummy dish, first, you need to make the signature machbous spice mix. For the same, take a large bowl and combine all the powdered spices: coriander seeds, allspice, white pepper, red chilli, cumin, loomi, cinnamon, cardamom, nutmeg and turmeric. Once the spice mix is made, set aside 50 g of for the recipe and pack the rest in an airtight container for future use.

  • Step 2 Marinate the prawns with machbous spice mixture

    Clean the prawns, peel them, and take the tail off them. Now, marinate the prawns in machbous spice mix, salt to taste and vegetable oil for 30 minutes.

  • Step 3 Soak the rice for 45 minutes

    Wash and rinse the rice three times. Then, soak them for 45 minutes and once done, strain the water.

  • Step 4 Cook the prawns

    For cooking prawns, put a large cooking pot over medium flame and heat oil in it. When the oil is hot enough, add chopped garlic, onion in it and sauté for 2 minutes. Now, crush the dried whole loomi and add to the garlic-onion mixture. Sauté until onions are soft and translucent. Now, add butter in the pot along with prawns and stir thoroughly. Finally, add tomato paste in the pot and cook for a minute. Then, add the chopped coriander, diced tomatoes and salt.

  • Step 5 Add rice and cook them

    Quickly, add the washed rice in the pot and the rest of the spices and stir. Now, add hot water and bring it to a boil. Cover the pot and simmer over low heat for 15-20 minutes until the rice is cooked. Now, serve with a garnish of fresh coriander.
