Chilli Paneer Quesadilla Recipe is a lovely amalgamation of an Indo-Chinese stir fry Paneer filled in a Mexican quesadilla, making it a fusion dish that you can serve to your guest at your next dinner party.

Stuff that in a humble tortilla to make this delectable fusion of Mexican with Chinese. Quesadilla is basically a Mexican dish, stuffed with different fillings. Though paneer quesadilla is not an authentic Mexican version, it is just a fusion recipe. In this recipe, I used paneer, capsicum, and sweet corn in this recipe. I usually make Quesadilla for a kid’s lunch box or for dinner.

  • Step 1 Marinate the paneer

    To prepare these lip-smacking quesadillas, first, take a bowl and add paneer cubes in it. Now add red chilli powder, paprika powder and cumin powder. Also, add dry herbs like oregano and dry thyme. Mix all the ingredients well to combine together and let the paneer marinate for some time.

  • Step 2 Prepare the stuffing

    Next, chop onions and red bell peppers. Keep aside until required. Next, heat olive oil in a pan and add in chopped garlic with onion, and red pepper. Saute for about a minute. Then add in the marinated panner cubes. Cook well to prepare the stuffing.

  • Step 3 Stuff the tortilla

    Once the filling is ready, take a tortilla base and spread olive oil on it. Now carefully add a layer of grated mozzarella cheese and top with the prepared filling. Season with pepper, sea salt, oregano and grated cheddar cheese. Cover with another tortilla base.

  • Step 4 Cook the quesadilla and serve hot

    Next, heat olive oil in a pan and add the prepared quesadilla. Cook well until the tortillas turns golden in colour and appears crisp. Remove from heat, transfer in a serving plate and serve hot.
