To cook baby potatoes, I prefer the pressure cooking method. The most important thing to remember here is that do not to let the potatoes sit in water. Fill the cooker with the required water and keep potatoes in another vessel that fits in the cooker. This way they end up steaming and not boiling, thereby not turning soggy.
Potatoes, garlic, and herbs are a most delicious combination. Add to that the toasty flavor and texture of sesame seeds, and it turns even more irresistible. No dish is complete with a touch of sour flavor, for which I have added sumac. Feel free to add a squeeze of lemon or lime juice instead.
If you have a mix of fresh herbs, then use that by all means. Do remember that you need nearly 3 times the quantity of fresh herbs (3 tbsp fresh rosemary=1 tbsp dried rosemary) for as much flavor.

Step 1 Wash the baby potatoes
To begin with, in this easy recipe, wash the baby potatoes under running water. Then drain the excess water. Next, take a saucepan over medium flame and add some water, then add in the potatoes with a dash of salt. Once the potatoes are boiled, turn off the flame and drain the excess water. Peel the skin and keep them aside.

Step 2 Heat oil and add cumin seeds
Heat a pan over medium heat and add some vegetable oil. Once the oil is hot enough, add the cumin seeds, once the cumin seeds turn brown in color, add the baby potatoes saute for 2 minutes and add some salt. Next cook for another 5 minutes, then add the whole green chilies just slit the center.

Step 3 Season the potatoes with spices
Cook for some time and season the potatoes with garam masala, coriander powder, turmeric, and red chili powder mix well and cook on a medium flame for about 10 -15 minutes. Increase the flame to get the desired color and crispness on the outside. Now, sprinkle some dry mango powder (amchur powder) and mix.

Step 4 Garnish and relish!
Remove from flame garnish with coriander leaves roughly chopped and serve. The best thing about this dish is that on the outside it will be crisp and when you take a bite into it would be soft like butter.

You can also wash & bake the potatoes to save time.

While boiling the potatoes make sure you do not overcook the potatoes else it will ruin the taste of the dish.

To make the dish more enticing add in some garlic while tossing the cumin, it will make your dish flavorsome.
