Masala Okra Recipe
Okra/Bhindi is one such seasonal vegetable, which can be prepared in various ways. Every region in India has a different recipe for this vegetable, but the best thing about this vegetable is that it can be paired with both Rice and Roti.

Step 1 Wash and slit the okra from centre
Wash the okra properly and keep them aside, let the excess water drain out. Once, drained properly, slit the okras by making a cut lengthwise. Next, chop the onions and green chillies finely and keep them aside. Peel and chop the onions in a bowl and keep aside until required.

Step 2 Saute the onions with spices
Now, put a kadhai on medium flame and heat the oil. Once the oil is hot enough, add cumin seeds and saute. Further, add the chopped onions and subsequently other spices like turmeric and coriander powder along with the green chilies. Stir them continuously.

Step 3 Fry the okra in the onions and add amchur in it
Add the okras and mix them well, so that they absorb the flavours and taste of the spices. Cook it with the lid covering and reduce the flame. Add salt and amchur (dry mango powder) to the cooked okra and give them one last stir. The Masala Okra is ready to serve with chapati or paratha of your choice.
