Kashmiri Shufta Recipe

Here comes a simple and quick recipe for all those people who have a sweet tooth. If you are in the mood to have a crispy and crunchy dessert which is full of rich nuts, then you should give a try to this Kashmiri delicacy soon. As the name says, Kashmiri Shufta is a traditional dessert which is loaded with lots and lots of nuts.

  • Step 1 Soak the dry fruits for half an hour

    To prepare this delicious dessert recipe, first, take a large sized bowl and pour good amount of lukewarm water in it. Then, soak the almonds, cashews, pistachios, walnuts along with sultanas (munnakas) in it for at least 30 minutes. Next, take another medium sized bowl and pour good amount of fresh water in it. Then, soak dried dates in this bowl for at least half an hour.

  • Step 2 Remove pits and chop the dates

    After soaking the nuts for half an hour, drain the water from both the bowls. Keep the nut mixture bowl(1) aside for future use. Now, take the dried dates bowl(2) and cut the dates in small pieces. Once done, keep aside. Make sure you remove the seeds.

  • Step 3 Fry the coconut and cottage cheese

    Next, take a large-sized pan and place it on low-medium flame. Then, add ghee and fry the dried coconut in it until its colour becomes slightly brown. Now, transfer the fried coconut on an absorbent paper and keep aside. Then, in the same pan fry the cubes of cottage cheese until their colour becomes slightly brown. Once done, transfer the cubes to an absorbent paper and keep aside.

  • Step 4 Add soaked nuts, chopped dates, coconut and cottage cheese cubes

    Now, in the same pan, add more ghee and transfer the soaked nuts mixture from bowl 1 and dried dates from bowl 2. Both the nut-filled bowls have been prepared in step 2. Next, add dried coconut along with cottage cheese cubes in the pan, prepared in step 3.

  • Step 5 Add sugar, spices, saffron & rose petals

    Now, add sugar along with black pepper powder, cinnamon powder, dry ginger powder, cardamom powder, saffron and rose petals in the pan. Mix well and keep stirring until the sugar is dissolved completely.

  • Step 6 Serve immediately

    Lastly, transfer the dessert to a serving dish and serve immediately.

Tips :

  • You may store the dessert in an air tight container for future use but make sure that you first warm it before serving.

  • Don't add water to the dish at any stage. The sugar will dissolve and coat the dry fruits all by itself.
