King of vegetables, potato is quite a versatile ingredient with which you can prepare any kind of dish, be it savoury or a sweet dish. This appetizer recipe is one such dish where the main ingredient is potato. This Thai recipe is prepared by cutting the potatoes in wedges and then deep-frying them in refined oil. These potato wedges are further tossed and cooked in ginger mushroom sauce, which is prepared using corn flour, mushrooms, soy sauce, ginger, garlic, green chilli, spring onions apart from other.   • Step 1

    To start with, take a deep-bottomed pan and heat oil in it over medium flame. Meanwhile, wash the potatoes in running water and pat them dry. Next, cut them in wedges and do not peel them. By then, the oil will be hot enough to deep fry these wedges. Drop these potato wedges and fry until they are golden brown in colour. Once done, place these fried wedges on an absorbent paper to soak the extra oil.

    Now, take a deep bowl and add cornflour along with water, mix well to make the corn flour batter. Keep it aside for the future use.

    Next, put a broad non-stick pan on medium flame and heat the oil. Once the oil is hot enough, add the finely chopped ginger and garlic in the pan along with green chillies, saute for a few seconds until the raw smell of garlic goes away.

    Add the finely chopped onions in the same pan and saute for a minute until it is brown in colour. Once done, add the sliced mushrooms and capsicums in the pan and stir fry for a minute.

  • Step 5

    Then, add soy sauce along with the cornflour mixture in the non-stick pan and cook for a while. Meanwhile, stir the mixture occasionally and cook for about 5 minutes.

    Once done, add the deep-fried potato wedges into the pan and cook for a minute, while tossing the mixture simultaneously. Garnish with chopped spring onions and serve immediately!
