Cucumber Kheer‏ is a lip-smacking kheer recipe which most of us wouldn't have heard of. This scrumptious kheer is made with milk, sugar, cucumber pieces, cooked further with condensed milk, sago and garnished with cashews.

  • Step 1

    To begin with, take a deep-bottomed pan and put sago along with enough water to submerge in it. Let soak for about an hour or so. Then, take the cucumber, peel and chop it further into pieces.

    Next, drain the water, refill it again and boil sago along with cucumber pieces until they turn tender on medium flame. Once done, drain the water and add salt. Once the salt is dissolved, pour condensed milk, milk and stir along.

  • Step 3

    Turn the flame to low and let simmer for about 5 minutes. Add water if thinner consistency is desired. Once cooked, add cardamom powder, turn off the flame and cover with a lid.

  • Step 4

    Your last step would be to place a pan on medium flame, pour ghee and once heated, add cashews and fry until golden brown. Pour it over the prepared cucumber kheer while serving.
