  • Step 1 Prepare the dough for stollen

    Take a bowl and pour warm milk in it. Dissolve yeast in the milk and a pinch of salt. Keep it aside for 10 minutes, or until the bubbles start forming. Now mix flour, egg, dry yeast, sugar, lemon peel, vanilla and salt with the help of a spoon or in a stand mixer using the dough hook for several minutes. The dough should just come together and not be very smooth yet. At this point, remove the dough from the bowl and set aside for a while.

  • Step 2 Mix butter and yeast dough until it is smooth

    Take butter and cream in the bowl. Add 2/3 cup flour with nutmeg and cardamom to the butter and keep whisking until it becomes smooth. Now add the yeast dough to this mixture and work the dough with a dough hook or by hand until everything is properly mixed. This should yield a smooth dough. Cover up the dough and let it rest for 30 minutes and knead in the soaked mixed dry fruits. Let it rest for 15 minutes.

  • Step 3 Bake the stollen, garnish with icing sugar and serve

    Now form it into a rectangle with two high sides and a dip in the middle. Then fold 1/3 of the dough over to the middle, filling the dip and pat into a stollen shape. Let the stollen rise for 30 minutes in a warm place. Preheat the oven to 190 degree Celsius and dot the top of the stollen with butter. Bake it for 35 to 45 minutes, or until loaves are golden and done. Cover it up with foil if it begins to get brown too much. Now brush the warm loaf with butter and dust it thickly with powdered sugar and let it cool on the rack. When it’s cool, serve it with hot coffee.

  • It is recommended to warm up the slices before eating, as it makes them crumbly and soft.
