Chora nu Shaak Recipe
Also known as Lobia Masala, this is a classic Gujarati recipe that one can easily prepare at home. This is an authentic North Indian recipe that's best enjoyed with chapati or roti. This Gujarati recipe is a powerhouse of nutrition and is loaded with protein, which makes it quite healthier than any other legume. Chora or Lobia is a high nutrition legume that's shaped like kidney beans but is smaller in size and has a black spot on it, which is why its called black-eyed beans or peas.

Step 1 Pressure cook the overnight soaked black-eyed beans
Soak the dry black-eyed beans in 6 cups of water for 8 hours. After 8 hrs, strain and wash the black-eyed beans again in running water. Pressure cook them with 4 cups water for 3 whistles.

Step 2 Sauté the whole spices
Meanwhile, heat oil in a pan over a medium flame. When the oil is hot enough, add mustard seeds in it along with carom seeds and allow them to splutter. Afterwards, add asafoetida, curry leaves, cinnamon stick, bay leaf, and cloves in the pan and cook for a minute.

Step 3 Sauté onion-tomato for 4-5 minutes
Next, add chopped onion in the pan and sauté till they become pink in colour. Then, add ginger-garlic paste, slit green chillies and tomatoes in the pan. Stir well and sauté for 5 minutes and then add all the masalas in it. Stir to mix all the masalas.

Step 4 Cook black-eyed beans for 5 minutes in this masala
Add cooked black-eyed beans and allow them to cook for 5 minutes over a slow flame. You can add water (in which the black-eyed beans were boiled), for making them in gravy-style. Garnish with coriander leaves and serve with Rotis or rice.
Tips :

If you need thick gravy, add 2 tbsps of besan (gram flour) after adding tomatoes.

You can add 3 tbsps of tamarind juice and 2 tbsps of Jaggery to give it a nice khatta meetha (sweet and sour) flavour.
