Citrus Rice and Apple Kheer Recipe
Kheer is something we all are familiar with, and is one of a traditional dish enjoyed across the sub-continent during festivities and celebrations. The recipe of this dish is quite similar to the regular kheer but with a twist.
Citrus Rice and Apple Kheer Recipe

Step 1 Soak the rice for 30 minutes
Rinse the rice until water turns clear. Then soak the rice in enough water for 30 minutes. After 30 minutes, drain the rice and set aside.

Step 2 Sauté rice in ghee for 1-2 minutes
Heat a heavy bottom pan on medium heat. Add 1 tablespoon of ghee to it and then add the soaked & drained rice. Also, add crushed green cardamom pods and cinnamon stick. Toss the rice with for 1 to 2 minutes, stirring constantly.

Step 3 Boil milk and let it simmer for 20-25 minutes
Then add the milk to the pan and stir well. Set heat to medium-high. Let the milk come to a boil, stir in between to avoid the milk getting stuck to the bottom of the pan. Once the milk has come to a boil, lower the heat and let it cook for around 20-25 minutes. Stir in between.

Step 4 Mix sugar in the kheer along with apple and chill for 2 hours
Add in the sugar and mix. Allow the kheer to cool completely. Now, add the grated apple, vanilla essence, cinnamon powder and orange zest. Cover and refrigerate for 2 hours or until its chilled.

Step 5 Garnish with nuts and serve chilled
Garnish with nuts, saffron strands and serve kheer chilled.
