Bobbatlu Recipe
As the festival of Pongal is around the corner, there is a lot of happiness and enthusiasm in the air. It is a very important South Indian festival and is celebrated as thanksgiving for the harvest of rice, sugarcane, etc. This is an auspicious occasion where the families and friends come together to celebrate the festival of Pongal. This is again that time of the year where everyone gathers and celebrates the occasion with lots of traditional foods.

Step 1 Prepare the filling by pressure cooking chana dal
To prepare this delicious dessert, start by making the filling of bobbatlu. Wash the chana dal and then pressure cook until it is tender but not mushy.

Step 2 Mix mashed chana dal with cardamom and jaggery powder
Mash the dal and cook it on the low flame then slowly add cardamon and jaggery powder. Mix everything until it combines together. Now your stuffing is ready, just keep it aside to cool down completely.

Step 3 Prepare the dough
Now, to prepare the dough, take all purpose flour and add salt . Now slowly add warm water as required to knead the dough.

Step 4 Stuff the filling and prepare rotis
After the dough is done, roll it into small rotis. Now take the stuffing and put in the center of the roti and gently close the edges together. Use a little butter to seal the edges properly. Now take some flour and dust it on top of the roti and start flatting it gently. Repeat the step with all other rotis.

Step 5 Toast rotis on a pan until cooked
Take a deep pan and put some ghee on medium flame. Now, put the bobbatlu in the ghee to roast it completely. Toast both the sides and cook until golden brown.

Step 6 Garnish and Serve
Your bobbatlu is ready, sever it with some more ghee on the top and enjoy this hot crispy desert.
Tips :

To make it more delicious add in some dates to the stuffing.

You can add some crushed almonds to make it more yummy.
