Black Rice Salad Recipe
This is an exceptionally healthy salad made using black rice. Black rice, also called forbidden rice earned its name because it was once reserved for the Chinese emperor to ensure his health and longevity and forbidden for anyone else.
Black Rice Salad Recipe
Ingredients:
- 1 cup black rice
- 1/2 teaspoon green olives
- 2 slice chopped yellow bell pepper
- 1 tablespoon balsamic vinegar
- 1 teaspoon lemon juice
- 1 tablespoon corn
- 1 bunch arugula
- 5 halved cherry tomatoes
- salt as required

Step 1 Boil black rice and corns
To prepare this amazing salad, put a pressure cooker on medium flame and add washed black rice in it along with 2 cups water and corns. Pressure cook them for 2 whistles. Drain the excess water using a strainer and set aside.

Step 2 Toss all the ingredients and serve
Take a large bowl and add boiled black rice in it with corns, washed arugula leaves, halved cherry tomatoes, green olives, chopped yellow bell pepper. Pour balsamic vinegar, salt and lemon juice, and toss well. Your black rice salad is ready to enjoy.

You can add any other greens or vegetables that you like to the salad.

If you like a spicy salad, you can add chopped green chillies and black pepper powder as per your taste.
