Step 1 Marinate the chicken with salt and turmeric
To prepare this recipe, first wash the chicken pieces thoroughly, drain the water, and coat with turmeric powder and salt. Keep it aside.

Step 2 Saute whole spices and add onions, tomato, and other spices
Heat a pan and put mustard oil. Now, add cinnamon, green cardamom, black cardamom, star anise, and fennel seeds and fry for 30 sec. Then, add sliced onions and fry them till golden brown. Add ginger-garlic paste and cook for 1 minute. Add turmeric powder, red chilly powder, and mix well. At last, add tomato paste and cook on low flame till the spice mixture starts leaving the sides of the pan.

Step 3 Add chicken to the sauteed spices and cook well
At this point, add chicken, mix well and cover it. Then add green chilies and little sugar. Mix well and don't use water. Cover it and cook until the chicken is tender and the spices and flavors are absorbed. Now add ghee and garam masala and mix well. Leave it covered for a few minutes. Serve hot with rice or luchi.
