Beetroot Hummus Vegan Buddha Bowl Recipe

Ingredients:

  • 3 cup boiled, soaked overnight chickpeas
  • 1 tablespoon lemon juice
  • 9 cloves garlic
  • salt as required
  • 1 cup boiled couscous
  • 1/2 lemon
  • 1 tablespoon roasted peanuts
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon cumin powder
  • 1 tablespoon breadcrumbs
  • 1 tablespoon tahini
  • 1 boiled beetroot
  • 1 tablespoon virgin olive oil
  • water as required
  • 1 spring onions
  • 2 cup spinach
  • 1 teaspoon sesame seeds
  • 3/4 cup coriander leaves
  • 1/2 teaspoon coriander powder
  • 1/2 onion

For Garnishing :

  • 1 cucumber
  • 4 cherry tomatoes
  • 1 avocado

Recipe :

  • Step 1 Prepare beetroot hummus

    To prepare this delicious one-pot meal, first, add the boiled beetroot in the grinder. Grind once and then add boiled chickpeas, tahini, lemon juice, 2 garlic cloves, 1 tablespoon olive oil and salt to taste. Grind once again and your beetroot hummus is ready.

  • Step 2 Make couscous salad

    Wash the spring onion and chop the green and white part separately. Now, take a bowl and mix boiled couscous with the juice of half a lemon, 2 chopped garlic cloves and add chopped spring onion to it and salt to taste. Mix well and keep aside.

  • Step 3 Here's how you can make crispy spinach with peanuts

    Wash spinach well for at least 7-8 times. Next, take a bowl and add spinach, peanuts, 2-3 crushed garlic cloves, sesame seeds, vegetable oil, and salt to taste. Mix well and add this bowl in an air fryer, and cook for 15 minutes. You can make crispy spinach in an oven as well.

  • Step 4 Make falafel balls and deep fry

    For the final part, you need to make falafel balls. For the same, grind together chopped coriander, onion and 2 garlic cloves. Next, take a bowl and add breadcrumbs, cumin powder, coriander powder, and salt to taste. Mix well all the ingredients and then crush using a potato masher. Now, make medium size balls of this mixture. Once done, deep fry these balls till golden brown in colour.

  • Step 5 Assemble all the ingredients

    Now, assemble all the ingredients. Take a large bowl and add couscous salad in it on one side. Next, add crispy spinach with peanuts next to it and then add falafel balls in the remaining space. Finally, add beetroot hummus over the dish and serve.
