Afghani fateer Paratha is a traditional and healthy Afghani flatbread stuffed with potato, onions, herbs and spices and cooked on tawa or pan with oil and served with butter.

Step 1 Knead the dough for paratha
Directions for dough: In a bowl add wheat and all-purpose flour, salt, ghee and knead a soft smooth dough by adding milk gradually. Cover and keep the dough aside for 20 to 30 minutes rest.

Step 2 Make the filling for paratha
Prepare filling of paratha In a bowl take the mashed potato and add chopped onion, chaat masala, red chilli powder, cumin powder, Kashmiri red chilli powder, salt to taste and mix well all together and make stuff filling. We cut the dough and rolled it in roti shape and apply the ghee on roti.

Step 3 Add stuffing on one chapati
On one of the rolled dough circle, place the potato stuffing in the centre and keep about 1-inch empty space from the sides.

Step 4 Close the roti with stuffing and roll like a lachcha paratha
Spread the potato on the roti and sprinkle the flour and roll it like a lachcha paratha.

Step 5 Roast paratha in ghee
Heat the pan and put the paratha and applied ghee and cooked from both sides till golden brown. Serve with butter on the paratha.
