These appetizing Vegetable Patties are a delicious treat. They are loaded with potatoes, carrots, corn, green beans, peas, and cooked in flavorful Indian spices! They are vegan, gluten-free, and taste amazing!

Step 1 Combine all ingredients in a food processor
Steam beans and carrots until they are soft, in slightly salted water. Drain off any excess water. Boil and peel potatoes. Then, add beans, potato, carrots, bread crumbs, ginger, mango powder, garam masala, chili powder, and chopped coriander in a food processor and combine well.

Step 2 Make patties
Adjust the seasoning of the mixture. Divide into equal parts and shape into patties, and chill for a few minutes.

Step 3 Shallow fry the patties
Heat oil in a pan and add patties to the hot oil. Flip over to cook until golden brown and crispy.
