  • Step 1 Cook rice flour in salted water

    To prepare Undhi, put a kadhai on medium flame and add 3 cups of water in it along with a little salt. Bring it to a boil. After a boil, add 2 cups of rice flour and mix. Stir well until the flour is mixed with the water to form a dough-like consistency. Once done, turn off the flame and let it cool.

  • Step 2 Prepare the potato filling for Undhi

    Put another kadhai over medium flame and heat oil in it. Once the oil is hot enough, add cumin seeds and mustard seeds in it. Let them crackle for a few seconds, then add finely chopped onion, ginger-garlic, and green chili paste. Stir and saute until it's golden in color. Now, add boiled and mashed potatoes, salt, turmeric powder, and coriander leaves. Mix well and cook for 2-3 minutes. Your stuffing for Undhi is ready.

  • Step 3 Knead the rice flour dough

    By now, the rice flour mixture will be cool enough to handle. Use a little water to knead the dough.

  • Step 4 Give the dough balls a poori-like shape and seal them like Gujiya

    Pinch a small piece of the dough and make it into a ball. Using your fingertips, give the small piece shape of small poori and add the potato stuffing in it. Now, give it the shape of a gujiya. Repeat the procedure to make more such gujiyas.

  • Step 5 Deep fry these potato stuffed Gujiyas and enjoy hot

    Finally, put a kadhai over medium flame and add these gujiyas to it. Fry them until golden in color and once done, remove them on a kitchen towel to soak the extra oil. Enjoy these Undhis with green chutney and tomato ketchup.
