Palak Kofta (spinach kofta curry) Fried Spinach Dumplings in a Creamy Tomato Sauce is a delicious vegetarian curry recipe. Spinach aka palak koftas is deep-fried balls/dumplings. These koftas are prepared with chopped spinach, potato, onion, and gram flour along with spices.

Then you deep-fry these koftas. When you add these to a creamy tomato and coconut-based gravy, then they make the Spinach Kofta Curry. Adding these delicious spinach Koftas in a creamy tomato gravy ranks them high in nutritional level.

Palak kofta is a ball, made using boiled spinach, boiled potato, and some spices. You mix all the kofta ingredients and shape them into balls. These balls are then either deep-fried or shallow-fried. You can also bake these balls if you want to healthify them. These koftas have a crispy outer layer and have a smooth melt-in-mouth inner texture.

  • Step 1 Prepare stuffing for kofta

    Heat oil in a pan add 1 gram black cumin seeds and allow to splutter, now add 3 grams chopped ginger and chilli. Now add spinach and sauté for 3 minutes and turn off heat. Now mix rest of the dry fruits (chopped apricot, almonds, cashews and prunes) for stuffing and reserve.

  • Step 2 Prepare kofta balls and deep fry

    Take a bowl and mix paneer, potato, cardamom powder, mace powder, and cornflour, and make eight balls of 35 gm each and fill 13 gm of stuffing in each ball and fry on slow heat till kofta turn light golden in color.

  • Step 3 Grind all ingredients together to prepare a paste

    Add peanuts, sesame seeds, coriander seeds, 2 grams of cumin seeds, Kashmiri chili, cashews, turmeric, and coconut to a mixer and make a paste.

  • Step 4 Saute onion and spices

    Heat ghee in a pan and add chopped garlic and onion and sauté till onion turn lite brown. Now add chopped ginger and roasted spice paste, and cook on slow heat.

  • Step 5 Cook kofta sauce and add balls to it

    Now add 500 ml of water and allow to simmer for 25 minutes. Strain the sauce and put koftas into the sauce and serve hot.
