  • Step 1 Grease the 8-cup pan with with melted butter

    To make this delicious cake, melt 1/4 cup of unsalted butter in a bowl. Take an 8-cup pan and pour 2 tablespoons of melted butter into it. Grease all the sides of the pan well.

  • Step 2 Combine all the spices with jaggery and sprinkle over the 8-cup pan

    Take a medium sized mixing bowl, mix together powdered jaggery, cinnamon, nutmeg, and almonds. Stir well. Now, sprinkle half of this mixture into the greased 8-cup pan. Add the remaining jaggery mixture in the bowl where the melted butter (Step 1) was kept and mix well. Keep this jaggery spice mixture aside for future use.

  • Step 3 Prepare the banana cream mixture

    Next, blend granulated sugar with another 1/4 cup of butter thoroughly. After the cream is formed, beat in the eggs one at a time. Again blend this mixture thoroughly. After everything is well incorporated, add mashed banana and orange zest to it and mix well.

  • Step 4 Prepare the batter by mixing dry and wet ingredients together

    Take a large mixing bowl, mix all-purpose flour, baking powder, baking soda, and salt. Add the banana cream mixture to the dry flour mixture and blend vigorously. Carefully pour the appropriate amount of buttermilk into the cake mixture and blend thoroughly to form a smooth batter.

  • Step 5 Fill the 8-cup pan with batter and jaggery-spice mixture

    Fill 3/4th portion of each cup of the 8-cup pan with the batter. Sprinkle the jaggery-spice mixture above the batter and again pour the batter over the spice, filling the remaining part of the cup. Even out the surface of batter using the back of a spoon.

  • Step 6 Bake the cake mix into the oven for 50 minutes

    Put this 8-cup pan into the oven and bake at 180 degrees Celsius for about 50 minutes. After the cake is completely baked, place it on a wire rack and let it cool. Invert the cake onto a serving plate and serve the cake warm or cool.

  • You can also substitute almonds for any other dried nuts such as walnuts.
