Pork Vindaloo Recipe
Pork Vindaloo is a Goan recipe, which is a little sour but quite hot and spicy. This curry recipe draws a lot of influence from Portuguese cuisine, because of the use of garlic and vinegar in this recipe, which are integral parts of Portuguese cuisine. This main dish recipe is spicy because of the dried chilies, while it is sour because of the vinegar and tomato used.

Step 1
First, wash and cut the pork into chunks, then rub the pork pieces with salt to dry the pieces off water. Keep them aside.

Next, prepare a paste for the pork curry. Blend together the red chilies, vinegar, ginger, garlic, chopped onion, turmeric and cumin seeds in a food processor. Use this paste to marinate the pork and let it sit for around 30 minutes.

Now, put a kadhai on medium flame and transfer the marinated pork pieces in it. Then, add the black pepper, cloves and cinnamon in the pan and fry for about 10 minutes. (Note: Oil is not required to cook this dish, as pork fat is used for the same.)

Once the fat starts separating from the meat, add some water in the pan and mix well. Keep it covered with a lid and let the pork curry cook on low flame for about 50 minutes, until the pork is tender. Garnish with a sprig of coriander leave and enjoy!
