Step 1 Fry onions and add spices
Roast mutton pieces in ghee in a pan and keep it aside. Now, fry the onion in ghee until brown and keep aside. Then, fry makhana (lotus seed pops) and keep aside. Heat ghee in a pan and add milk, ginger garlic paste, tomato puree, coriander powder, chilli powder and garam masala. Cook for 10 minutes on medium heat.

Step 2 Add mutton and cook well
Then, grind the cashews and fried onion together with some water to make a thick and smooth paste. Add the cashew paste into the pan along with chaat masala, salt and cook for 7 minutes. Add cream, kasoori methi, green chilli, ginger, lemon juice and mix well. Transfer the roasted mutton in the gravy and cook for 6-7 minutes. Garnish with green chillies, grated ginger, makhana, and boiled egg cut into halves. Serve hot.

Use Kashmiri chilli powder for a milder flavour and a more vibrant colour in your Mutton Changezi.

For achieving a thicker and creamier gravy, you can add 1/2 cup milk instead of water while making the cashews and fried onion paste.
