Korean Glass Noodles Recipe

Korean Glass Noodles or most commonly known as 'Japchae', is a popular Korean recipe that you can easily make at home. In Korean language, Japchae literally means mixed vegetables. Traditionally cooked using sweet potato starch noodles, this Asian recipe is loaded with sweet and savoury flavours that will entice you to eat it by yourself.

Step 1
To prepare this delicious noodles recipe, pour the whipped mixture of soy sauce, brown sugar and boiling water over the parboiled cellophane noodles and allow it to soak for about 2 minutes.

Place a skillet over medium flame and heat a tablespoon of oil in it. Once the oil is hot enough, add ginger pieces in it and saute for a few seconds. Add the chicken in it and cook for two minutes.

Then, add spinach, carrot and mushrooms in it. Stir and sprinkle a little salt along with white pepper powder. Mix well and cook till the chicken is tender and light brown in color. Once done, keep aside until required.

In the same skillet, add more oil and heat over medium flame. Add the mixture of soy sauce and vermicelli in it and stir fry it until cooked. Once the cellophane noodles are cooked, add the cooked chicken and veggies in it and mix lightly, so as not to break the noodles.

Heat refined oil in a pan over medium flame. Add the mixture of soy sauce and vermicelli and stir fry it until cooked. Sprinkle some sesame seeds before serving it hot. Sprinkle some sesame seeds before serving it hot.
