  • Step 1

    Wash and wipe brinjals and chop them into medium size cubes.

  • Step 2

    Heat oil in a broad pan and deep fry the brinjal cubes on medium heat. Stir continuously.

  • Step 3

    Fry the brinjal cubes till they become golden in colour.

  • Step 4

    Drain the fried brinjals on a paper napkin to absorb the extra oil.

  • Step 5

    In a heavy and wide cooking pan add mustard oil.

  • Step 6

    Mix all the dry spices with 2 tbsp water and keep aside.

  • Step 7

    Now add green cardamom and asafoetida in the hot oil and when cardamom starts crackling, add the spice mixture in it.

  • Step 8

    Give it a stir and then add the whisked yogurt. Keep stirring to avoid curdling.

  • Step 9

    Once it starts boiling then add the fried brinjal pieces. Cook on medium heat for about 5-6 minutes.

  • Step 10

    When it starts to thicken and brinjal pieces become soft then it is done. Serve hot with roti or steamed rice.
