A popular snack from the streets of Maharashtra. Batata translates into a potato in English. Mashed masaledar potatoes coated in a thick besan (chickpea flour) batter and deep-fried till golden. Served with tangy chutney, batata vada is a street food delight that you can easily prepare at home during the monsoon season or usually as an evening snack. These are simple and quick so you can easily dish up this chatpata snack when unexpected guests arrive.

Step 1 Make a thick batter of gram flour
To prepare this amazing dish, make a thick batter of besan by mixing it with a pinch of turmeric (Haldi) and a pinch of salt with water and keep it aside. Next, peel and crush garlic cloves and chilies together in a pestle and mortar.
Step 2 Saute garlic-chilly paste for the filling
Now, heat 2-3 tsp of oil in a kadhai and let it heat. When the oil is hot enough, add rai in the hot oil. Once it starts spluttering, add crushed garlic and chilies paste and roast on medium heat. Meanwhile, grease the Paniyarakkal or appam Patra and keep it aside.
Step 3 Cook mashed potatoes for the filling
To this, add curry leaves and all the dry spices (salt, turmeric, amchur (dry mango powder), and jeera powder). At this stage, add mashed potatoes to the spices and mix well. Cook on a medium flame for 8-10 minutes. Once done, let it cool and add freshly chopped coriander over it.
Step 4 Cook for 5-6 minutes
When the filling is done, make 12 balls it and coat them in the besan batter. and place them on greased Appam Patra. Cook them over medium flame for 5-6 minutes and make sure to cook from both sides. Relish as Vada Pav with homemade whole wheat pavs.
