Mendu Vada Crispy, fluffy and delicious vada that goes very well with coconut chutney or sambar. These urad dal vadas are also known as Garelu in Andhra, Uzhunnu Vada in Kerala, and Medhu Vadai in Tamil Nadu. It is one snack I loved as a kid and still does. I especially like the crispy and fluffy medu vada dunked in hot sambar with coconut chutney by the side.

Ingredients:

  • 1 Cup of Udad Dal
  • 2 Pieces Of Chopped Green Chilli
  • 1tp Spoon Cumin Seeds
  • 1 Piece of Chopped Ginger
  • Salt (As Per Test)
  • Coriander Leaves
  • Oil (For Deep Fry)

  • 1 કપ અડદ ની દાળ
  • 2 નંગ કાપેલું લીલું મરચું
  • 1 ચમચી જીરું 
  • 1 નંગ કાપેલું આદુ 
  • મીઠું (પરીક્ષણ મુજબ)
  • કોથમીર
  • તેલ (તળવા માટે)

Tips:

  • When you fry the vadas, make sure that the oil is not too hot as that will not cook them from inside. Always keep the oil to medium hot so that the vadas are cooked from inside.
  • If the Medu Vada batter becomes too runny, add rice flour to it to make it smooth.
  • There is a timing of adding salt to the batter. Always, add it while grinding the dal as adding it afterwards can make the batter runny.
