  • Step 1 Boil the carrots

    Cut the carrot into large blocks and cook them for about 10 minutes in water. Once they are soft, drain this water out and transfer them back to the pot.

  • Step 2 Add in the vegetable broth

    To the same pot, add the vegetable broth along with chopped onions, grated ginger, coconut milk and salt and pepper. Let this cook for about 10 more minutes on medium heat. Once the broth comes to a boil, lower the heat, cover and let it cook for 30 minutes minimum.

  • Step 3 Blend and serve

    Once the soup is cooked, let it cool down completely and then blend into a fine puree. Heat it before serving and garnish with some coriander leaves!
