Step 1
For the tarts, in a bowl, mix 3 tablespoon of powdered sugar, baking powder along with all purpose flour and sieve it thrice to ensure that it is even. Next, add butter and 4 teaspoon of cold water in it to bind all the ingredients together. Do not knead to form the dough. Refrigerate this mixture for some time. In the mean time, preheat the oven at at 180 degrees Celsius.

Once the mixture is a little firm, take it out from the fridge and roll it out to a thickness of 1/4 inch each, using a rolling pin. Line the tart tins with the rolled out dough and remove the extra from the edges using a sharp knife. Place these in a preheated oven and bake at 180 degrees for 10 minutes or until the tarts become crispy. Once done, remove from the oven and allow them to cool.

Next, wash the strawberries thoroughly and put them in a blender jar to blend and form a smooth puree. Pass the puree through a sieve into a bowl to remove the seeds. Now, stir in the 1 tbsp of lemon juice and mix. In the mean time, place white chocolate in a microwave safe bowl and microwave for 30 seconds. Take it out and stir until it is melted. Place it in the microwave again for 30 seconds to melt and become smooth.

In a separate bowl, add remaining cold water along with gelatin and let the mixture stand for 5 minutes. Next, place a pan over medium flame and add 1/4 cups of the whipping cream along with 2 tablespoon of powdered sugar in it. Mix it well and let it get hot. Once it heats up, add the gelatin mixture and stir until it dissolves. once it thickens, remove from the flame and add the melted white chocolate to it. Stir all the ingredients well and whisk in prepared strawberry puree along with a drop of edible red food color. Mix it until the color of the mixture turns pink.

Next, add the chocolate mixture to the remaining whipping cream and lightly fold it in. Transfer this mixture to a piping bag and pipe it into the baked tarts. Garnish with chocolate shavings and serve!
