  • Step 1

    Start by making the curry paste by adding lemon grass, lemon juice in a small bowl. Mix it and keep it aside for sometime. Now, place a pan over medium flame and add peppercorns on it along with coriander and cumin seeds. Dry roast for a minute and then transfer it to a separate small bowl.

  • Step 2

    Add lemon grass, bird eye chilies, ginger, shallots, spring onions, garlic and dry red chili in a food processor and process as smooth as you can till the mixture is slightly coarse. Put this paste in a jar and keep it aside. Now, remove the thick cream from coconut milk and pour it in a large frying pan over medium flame.

    Add the paste prepared in the jar to this pan and cook for 2-3 minutes over medium flame. Add the chicken pieces now and stir well. Now, add coconut water, Thai green curry paste to it along with chicken stock in it and mix well over medium flame for 5-7 minutes. Make sure the sauce is slightly thin.

  • Step 4

    Your Thai green Chicken Curry is now prepared. Transfer it to a serving bowl and garnish with coriander leaves and red chilies. Serve it with hot steamed rice and enjoy.
