Qatayef Recipe
Qatayef is one of the most popular dessert in the Arabic countries. This sweet indulgence is commonly prepared during the auspicious time of Ramadan. Filled with loads of cream or a variety of nuts, these sweet dumpling or folded pancakes, as it is commonly referred to, will give you a sugar rush.

Ingredients:
For Dough :
- water as required
- 1/4 cup sugar
For Garnishing :
- chopped mixed dry fruits as required

Step 1
In a small bowl, add lukewarm water, a pinch of sugar and mix well. Then add active yeast and mix well. Keep it aside for 5 to 7 minutes. Until then, in a bowl add plain flour, semolina, salt, sugar, milk powder and yeast mixture. Mix all the ingredients with water till no lumps remain and make a batter in pouring consistency. Close with a lid and keep the batter in a warm place for 1 hour.

Now, make the stuffed cream. Boil the milk in a pan and add sugar, fresh crumbled paneer and rose essence, and mix well. Add corn flour to the mixture and cook for 2 minutes on a low to medium flame. Remove from the gas stove and let it cool down.

After an hour, a fluffy batter gets ready and whisk it well. Grease the tawa with ghee, pour a spoon of batter on it. The first 30 seconds, the batter is to be cooked on a high flame, then cook on low to medium flame for 5 minutes or until cooked. Cook only one side and place it on a kitchen cloth or an absorbing tissue, so that it absorbs the extra oil. I have made 8 Qatayef pancakes out of this batter.

Step 4
Fold the pancakes, squeeze them and fill them with the cream. Garnish them beautifully with dry fruits. Your yummy Qatayef is ready to eat.
