Mixed Vegetable and Cottage Cheese Soup Recipe

Ingredients:

  • 1 number carrot
  • 1/2 cup peas
  • 1/2 capsicum (green pepper)
  • 1/2 cup lentil
  • 400 milliliter water
  • as required salt
  • 20 gm butter
  • 1/2 cup cauliflower
  • 1 number beetroot
  • 1/2 cup cabbage
  • 2 number tomato
  • 65 gm cheddar cheese
  • black pepper as required
  • 4 tablespoon corn
  • 1/2 cup green beans

For Garnishing :

  • Step 1

    Start by chopping carrot, beetroot, cabbage, capsicum and cauliflower, one by one in a bowl. Take a pressure cooker, add chopped vegetables and water in it. Add peas, lentil, corn and cheddar cheese in the cooker.

  • Step 2

    Season the vegetables properly with salt and black pepper. Close the lid of the cooker and heat it over medium flame. Cook it for 10 minutes and add more water if required. Once cooked, remove from flame and transfer soup to a large bowl.

  • Step 3

    Add butter and garnish with chopped coriander leaves. Serve hot.
