Khaari Puri Recipe
Puris are one such main dishes that are loved by the Indians and are made with various variations. Khaari Puri is one of the lip-smacking varieties of puri which owes it's origin to Gujarat. This easy-to-make puri is made using simple ingredients such as gram flour (besan), wholemeal flour, ghee, green chilies and a melange of spices. This delectable puri can be prepared for special occasions such as festivals, buffets and kitty parties.

Step 1
Place a pan over medium flame, roast cumin seeds and coriander seeds in it until the raw smell goes away. Transfer it into mortar and crush with pestle.

Clean the pan with a kitchen cloth and heat ghee in it on medium flame. Saute green chillies and gram flour in the pan for 5-6 minutes then stir in coriander seeds, cumin seeds, turmeric powder, red chili powder, garam masala powder, salt and saute again for a minute or two.Transfer the mixture into a bowl.

In another bowl, add whole wheat flour, salt, enough water and knead a dough. Divide the dough into 16 equal portions. Take one portion and roll it into a small circle, add a little gram flour mixture, and roll into a ball. Flatten the ball and drizzle a little oil on it. Roll out the ball into a puri.

In a deep-bottomed pan kept on medium flame, add oil. When the oil starts to fume, gently place the puri in the pan and fry until golden in color. Place 2-3 tissues on a plate and transfer the puri onto it. Similarly prepare all the puris.
