Indori Poha Recipe
Indori Poha is a widely eaten breakfast in central India. The recipe is quite similar to the usual poha recipe but the traditional poha actually uses a little bit of water which is why it is also called 'tari poha'. Just a little bit of water is added to give the poha the much needed softness. Here no veggies are actually added but you can always go for your favourite vegetables to toss in the poha. Indori Poha serves as the perfect breakfast as well as a standalone snack.

Step 1 Wash Poha
Wash the poha thoroughly with water. Soak the poha in water for 4-5 minutes.

Step 2 Prepared the masala
Take oil in a pan, once heated add cumin seeds, fennel seeds, mustard seeds, turmeric and green chilli. Cook for 3-4 minutes.

Step 3 Cook the poha
Now drain the water from the poha and add it to the pan. Switch off the flame immediately after adding the poha. Mix well, cover the pot for 2 minutes. Now add sugar, salt along with 1/4 cup water. Switch on the flame and cook for just 3-4 minutes. Don't overcook, as it will make the poha hard.

Step 4 Garnish and relish!
Once done, transfer poha to a bowl. Garnish with lemon juice, coriander, roasted peanuts, pomegranate seeds and sev. You can also add potato and onions while making the poha if you wish.
