Eggplant Rolls with Couscous and Tahini Dip Recipe

Ingredients:

  • 1 cup boiled couscous
  • 1/2 chopped onion
  • 1 tablespoon red bell pepper
  • 1 tablespoon celery
  • 2 cloves chopped garlic
  • salt as required
  • 1/2 lemon
  • 2 teaspoon nutritional yeast
  • 4 eggplant/ brinjal
  • 1/4 yellow bell pepper
  • 2 tablespoon boiled peas
  • 1 tablespoon virgin olive oil
  • chilli flakes as required
  • 2 tablespoon tahini
  • 1 teaspoon honey
  • water as required

Recipe :

  • Step 1 Grill and eggplants

    To prepare this amazing eggplant roll, wash the aubergines and cut them in slices length-wise, and then brush a little olive oil on it with a little salt. Place a grill pan on medium flame and then let them grill till they are brown in colour. Once done, transfer to a plate and let them cool.

  • Step 2 Saute all the veggies

    Now, put a pan over medium flame and add 1 tbsp olive oil in it. Add finely chopped garlic in it and saute for a while. Then, add chopped onions, boiled peas, chopped bell peppers, and celery. Saute them as well, then add salt and chilli flakes in it. Mix well and then add the boiled couscous and stir once again. Don't cook much as the couscous is boiled already.

  • Step 3 Fill grilled eggplants with couscous mixture and roll

    When the couscous mixture is cooled, add it in each eggplant and roll them to make an eggplant roll.

  • Step 4 Prepare the Tahini dip

    Now, make the tahini dip by mixing together tahini sauce, juice of half lemon, honey, nutritional yeast, salt to taste, a little water. Whisk all the ingredients well to make the tahini dip.

  • Step 5 Drizzle tahini on top of the eggplant and serve

    Drizzle the tahini dip on each eggplant roll and add a celery leaf on top. This will make 8-10 rolls, serve hot.
