Dodha Barfi Recipe

  • Step 1 Boil milk and add alum to it

    To prepare this delicious sweet dish, chop the dry fruits in a bowl. Next, put a deep-bottomed pan over a high flame and add milk to it. Bring it to a boil and then add sugar along with alum in the boiled milk. Lower the flame and let the milk simmer till it reduces to half the quantity. You will notice that the milk begins to thicken.

  • Step 2 Add glucose in milk when its reduced to half the quantity

    Once the milk is reduced to half the quantity, add the glucose and stir well. Next, add ghee to the milk and cook for another 10-15 minutes. You will notice that the mixture will start leaving the sides.

  • Step 3 Add water and let it cool, then grease a tray with ghee

    By now, the mixture will be grainy and dark in colour. Now, add water to it and stir once again. Let the mixture cook for two more minutes. Meanwhile, take a metal tray and grease it with ghee.

  • Step 4 Spread the mixture in the greased tray and chill for 5-6 hours

    Switch off the burner and spread the grainy mixture on the tray. You can use a spatula to evenly spread the mixture. Top up this mixture with chopped dry fruits and keep it aside for five to six hours in the fridge and wrap it with cling film to avoid any smell.

  • Step 5 Serve

Tips :

  • You can store your dodha barfi in an airtight container for up to 4-5 days.

  • You can also add 100 grams semolina to the barfi to get a grainy texture.
