These little treats full of so much flavour have become an integral part of our ‘snack’ culture so intensely that it is difficult to not think about them for 2 weeks straight.

Step 1 Soak the dry red chillies and boil the tomatoes
Soak red chillies in water for 2 hours. Boil water and add tomatoes and cook for 5 minutes.

Step 2 Chop the tomatoes and red chillies
Once the tomatoes are blanched for around 7 minutes, take them out of the water and remove skins from them carefully. Roughly chop them and put in the blender along with the soaked chillies.

Step 3 Blend a smooth paste
Blend the mix to a smooth paste and add the garlic. Blend again until a semi-thick consistency is achieved. The sauce shouldn't be too thick or too runny, just enough to lightly coat the momo when dipped.

Adding more oil makes it tastier, but that depends on how much oil you want to consume.

Try to always choose ripe tomatoes and use fresh garlic for best results.

Soaking the red chillies for at least 2 hours is necessary so that a smooth blend can be achieved.

If you want a spicier version of the chutney, add less sugar and increase the number of dry red chillies.

Adding a teaspoon on vinegar can help you store the chutney for a month.
