It is popularly believed that kebabs are mostly non-vegetarian. Contrary to this, Nadru Shammi Kebab is a delicious vegetarian kebab dish that makes for a great starter at parties.

  • Step 1 Boil lotus stem and kala chana

    To prepare this scrumptious dish, wash and clean the lotus stem. Now, add water in a pan and bring it to boil. Once the water boils, add the lotus stems with Kala chana.

  • Step 2 Prepare chana dal powder

    While the ingredients boil, heat a pan over medium flame and add chana dal in it. Dry roast the dal for 4-5 minutes then remove from flame. Add the roasted dal in a mixer/grinder and grind to powder.

  • Step 3 Prepare a mixture

    Next, in the grinder add the boiled Kala chana and boiled lotus stem. Grind them together to get a thick paste. In the prepared paste add chana dal powder, chaat masala, coriander leaves, garam powder masala, chopped green chilli, chopped onions, red chilli powder, salt. Mix the ingredients to combine.

  • Step 4 Fry the kebabs

    Divide the prepared mixture into lemon sized balls and shape them into small circular kebabs. Finally, heat oil in a pan. Once the oil is heated enough, gently add in the prepared kebabs. Cook until sizzling golden on both sides.

  • Step 5 Serve hot

    Transfer the kebabs on an absorbent paper to remove excess oil. Serve hot with mint chutney, pineapple chutney and yoghurt chutney.

Tips :

  • You can also use boiled potatoes to replace black chana in this recipe.

  • Add 1/2 tsp nutmeg powder and 1/2 tsp fennel seeds to the kebab mixture for an enhanced flavour.
