Usal Pav Recipe
Usal Pav is an integral part of quintessential Maharashtrian street food. Found in every nook and corner of Maharastra, Usal Pav is a mild-spicy, semi-gravy dish that is prepared by cooking lentils or legumes in tamarind gravy and is mixed with an array of aromatic Indian spices. The main spice used is goda masala which is an authentic Maharashtrian masala that must be used to get the original taste. The flavourful dish comprises of two parts, the gravy-Usal and the accompaniment bread- Pav.

Step 1 Soak and cook the white peas
To prepare this enticing dish, first, add water in a pressure cooker with the white peas. Let the peas soak in water for 8 hours. Then, pressure cook with water for 5-6 whistles. Let the pressure release naturally. Once done keep the peas aside for further use.

Step 2 Saute spices with onions and tomatoes
Now, heat oil in a pan over medium flame. Once the oil heats add in mustard seeds, curry leaves, garlic, asafoetida and saute for a minute or two. Then add chopped onions and saute till it starts losing colour. Once that happens, add the chopped tomatoes as well. Saute for about 2 minutes.

Step 3 Add white peas and goda masala and cook
Now switch the heat to low and add in tamarind juice. Let the mixture simmer for 10 minutes. After 10 minutes, add in the cooked white peas, salt, goda masala and chilli powder. Cover the pan and let the mix cook on low flame for 20-30 minutes.

Step 4 Serve usal with toasted pav
Once done, remove from heat and add the chopped coriander leaves and garnish with chopped onions. Now, apply butter on the pav and toast it well. Serve the usal hot with toasted pav.
