Recipe :

  • Step 1 Preheat the oven at 325 degrees F

    Put the baking rack in the lower middle section of the oven and preheat it to 325 degrees F.

  • Step 2 Make the cake flour mixture

    Make the sugar into a fine powder. Take out 1 cup aside for next steps and let the remaining stay in the food processer. Mix salt and cake flour in it and pulse 5 to 10 times so that the mixture becomes light and fluffy.

  • Step 3 Whip the eggs, sugar and cream of tartar until soft peaks form

    In another mixing bowl, use a stand mixer to mix egg whites and cream of tartar until frothy on medium-low speed. Increase the speed to medium-high and gradually mix the 1 cup sugar a little at a time. Whip for 5 to 6 minutes until softy-like peaks form. Add vanilla extract and mix.

  • Step 4 Sift the cake flour mixture in the creamed egg mixture and prepare the cake batter

    Use a fine-meshed strainer to sift the flour into the egg mixture in three additions. Don’t add the flour mixture all at once or the cake will become stiff and dense. So sift and fold slowly.

  • Step 5 Bake the cake for 40-45 minutes

    Put the batter in an ungreased pan and shake it lightly to even out the surface. Bake for 40 to 45 minutes until a toothpick comes out clean. Don’t forget to rotate the pan when after it has baked for 20-25 minutes before resuming baking.

  • Step 6 Top with icing sugar when the cake is cooled, and serve

    Let the cake cool for at least 3 hours on a wire rack. Run a knife along the edges to let the pan release the cake when it has completely cooled. Sift some icing sugar on the top to finish.
