To prepare this appetizer recipe, add 3 cups of water to a pot and give it aboil. Then, add shrimp/prawn heads and boil until the water turns orange in color. Now, press the shrimp heads and let the stock reduce to 2 1/2 cups. Drain it and discard the shrimp heads.

Then add lemongrass, galangal, kaffir lime leaves, birds eye chilies, mushrooms and Thai red chilli paste to the shrimp stock and bring it to a boil.

Finally, add the shrimp, fish sauce and lime juice. Boil until the shrimps are cooked, dish out and serve hot.
