Have you ever heard of a khichdi made of only potatoes? This Potato Khichdi is perfect for those who keep a fast or ‘vrat’. Looking just like mashed potatoes, Potato Khichdi is a savoury dish that you can have during vrat or a fast.

  • Step 1 Grate the potatoes and soak in water to avoid discolouration

    To make your very own Vrat ki Potato Khichdi, first, peel the potatoes and grate them. Put the grated potatoes in a bowl with an appropriate amount of water so that there is no discolouration. Drain and squeeze the excess water from the grated potatoes and keep them aside for some time.

  • Step 2 Saute curry leaves and cumin seeds on low flame

    In the meantime, heat the refined oil in a deep and non-stick frying pan and add curry leaves and cumin seeds to it. Saute the mixture and leave it on a low flame for about half a minute.

  • Step 3 Cook the grated potatoes for 5-7 minutes

    After the saute is done, add the grated potatoes and Himalayan salt as per your taste. If you do not have Himalayan salt, you can also use any rock salt. Stir at regular intervals until the potatoes are thoroughly cooked.

  • Step 4 Add the remaining ingredients and cook for another 2-3 minutes

    Sum up by adding lemon juice, coriander leaves, green chilli sauce and crushed roasted peanuts to the mixture. You can skip the chilli sauce if you avoid regular salt during your fast. Stir again at regular intervals and let it cook on a low to medium flame for about 2 to 3 minutes. Lastly, add sugar and let it cook for another minute. Serve hot.

Tips :

  • Use sendha namak (rock salt) instead of normal salt to keep your potato khichdi vrat or fast friendly.

  • You can also flavour your khichdi by adding 2 green cardamoms and 2 cloves to the tempering.
