Unique Chicken Biryani Recipe (NON-VEG RECIPE)
Chicken Biryani is a savory chicken and rice dish that includes layers of chicken, rice, and aromatics that are steamed together. The bottom layer of rice absorbs all the chicken juices as it cooks, giving it a tender texture and rich flavor, while the top layer of rice turns out white and fluffy. Buried in the Biryani, you’ll find whole cuts of succulent chicken bursting with flavor from the potent array of spices, herbs, and aromatics it’s marinated in.
Although widely associated with Indian cuisine, Chicken Biryani is a dish that has spread across a wide swath of South Asia, reaching as far west as Iraq and as far east as Indonesia. The vast geographical area Biryani calls home has resulted in a wide variety of preparations and ingredients; however, it is typically prepared by layering seasoned chicken with rice and aromatics and steaming them together.
The name Biryani is thought to be derived from the Persian word birinj which means “rice”.

Step 1 Prepare the marinade and marinate the chicken for 12 hours
In a bowl, add buttermilk and curd, and mix well. Now add washed chicken pieces in it then add salt, chilly powder, turmeric powder. Mix all very well keep it in the fridge for 12 hours or overnight. Afterward, after 12 hours, soak the rice in water for 2 hours.

Step 2 Make a green paste
Next, heat oil in the pan and add sliced onion in it, fry them till the barista is ready. Until then make the green paste by mixing together ginger garlic paste, green chilies, coriander leaves, and mint leaves. Use a little buttermilk from marination for grinding all the ingredients to make a fine paste.

Step 3 Marinate chicken again with green paste and other spices
Now, take out the marinated chicken. Add green paste, turmeric powder, coriander powder, cumin powder, sugar, and garam masala powder mix very well keep aside.

Step 4 Cook the marinated chicken for 10-15 minutes
In a pan or kadhai, add oil. When the oil is hot enough, add dried Indian spices fry for a minute now add onion barista ( take out some barista for topping and garnishing ), chopped tomatoes mix well cook for 5 minutes on medium flame. Now add marinated chicken mix well add chilly powder and salt as per taste mix well close lid cook for 5 minutes on medium heat. Open lid cook till all water reduced from it on medium flame then switch off the flame.
- Step 5 Add rice and prepare biryani
Now in a large vessel, add water then add the salt and lemon juice mix well boil it. When water starts boiling add soaked rice cook it 50 percent then drain the water from it. Then, in a big vessel spread half rice, on rice spread gravy add barista, chopped coriander leaves, and mint leaves on it, and sprinkle half lemon juice. Now spread another rice part then spread barista chopped leaves, lemon juice, hot oil, and milk and orange food color mixture. Close the lid and cook till Biryani cooked very well. For garnishing, take out the biryani on the plate and spread barista and leaves on top. Keep tomato flower on top serve hot.
