  • Step 1

    Thinly slice the onions and keep them aside. Cut the meat into bite-sized pieces. In a deep bottomed pan, heat oil and ghee together. When it is sufficiently hot, add sliced onions. Now add peas, cashews, raisins, and fry on low flame for 2-3 minutes.

    Now drain oil from this mixture and keep it aside. Put back the oil in the pan.

    Now add cinnamon and cardamom to this oil and when they turn aromatic, add chili powder, curry powder, curry leaves, and mutton. Add salt, turmeric, black pepper, and tomatoes and cook covered on low flame till the meat is soft. You may need to add some water during cooking the mutton if it becomes dry.

  • Step 4

    Meanwhile, wash rice and cook it with four times the amount of water. When it is almost done, remove it from the fire and spread it on a plate till all moisture is evaporated.

  • Step 5

    Now gently mix the rice with the mutton and add top with the peas, dry fruit, and onion mixture and serve with the curry, raita, or salad of your choice.
