Mumbai-style Vada pav Recipe
Mumbai is famous for its lip-smacking street food. From Bhelpuri and Pav Bhaji to Gola Chuski and Misal Pav, Mumbai has a lot to offer. But do you know what is that common street food that is every Mumbaikar's go-to snack? It is the classic Vada Pav, which you can find with most street vendors.

Step 1 Make potato mixture
Take a big bowl and add the grated potatoes to it. Now add mustard seeds, curry leaves, ginger paste, garlic paste, green chillies, 1/2 tsp turmeric, coriander leaves, lemon juice and salt as per taste. Use a spoon and mix everything well. Set the mixture aside.

Step 2 Prepare besan batter
Now take a separate bowl and add besan to it. Now add 1/2 tsp turmeric, red chilli powder, rice flour, asafoetida and salt as per taste. Add water in batches and mix well to form a besan batter.

Step 3 Heat oil
Add oil in a kadhai for deep frying and let it heat on medium flame.

Step 4 Make balls and deep fry
Now make 6 balls from the potato mixture. Dip them in besan batter and coat them well. Deep fry in hot oil until golden-brown from all sides.

Step 5 Prepare the pavs
Now make a slit in the pav, but make sure they are attached from one side. Now take a non-stick tawa, add butter and cook pavs from both sides.

Step 6 Serve!
Stuff a potato ball in each pav. Drizzle some green chutney or tamarind chutney on top and press it down a bit.
Tips :

Close the vada pav and serve! You can also add some extra sev for added crunch.

Serve it with a green chilli on side for extra spice.
