Step 1 Set pan on medium flame
To prepare this amazing Christmas cake, add dried cranberries, cherries, dates and figs in a bowl, along with lemon juice-zest, orange juice-zest, scotch whisky, butter and brown sugar in a pan. Mix well and set over medium flame.

Step 2 Boil the ingredients
Mix everything lightly and let it come to a boil. Then let it simmer for 5 minutes more on low flame. Once done, set it aside.

Step 3 Preheat the oven
Now, preheat the oven to 150 degree Celsius for 10 minutes. In a baking tin, lay a parchment paper and set aside.

Step 4 Prepare the cake batter
In a separate bowl, add all purpose flour, almond flour, baking powder, baking soda, cinnamon powder, vanilla extract, flaked almonds, eggs and the previously prepared fruit mixture. Mix well until everything it combined.

Step 5 Bake the cake for 2 hours
Now, pour the cake batter into the baking tin and bake at 150 degree Celsius for 2 hours.

Step 6 Poke some holes
Once done, take the cake out from the oven and poke some holes in it using a toothpick. Pour 1-2 tbsp of scotch whisky over the cake and let it rest till completely cool.

Step 7 Store in an airtight container
Once cooled down, cover the cake using a foil wrap and put it in an airtight container.

Step 8 Seasoning with alcohol
Now, take it out every week till Christmas and add 2 tbsp of rum or whisky on the top and wrap again.

Step 9 Infuse the flavours
You must make this cake at least two weeks before Christmas to infuse the right flavours in it.

Step 10 Some more alcohol
Take it out one last time on Christmas eve, repeat the process of adding alcohol and wrap it again.

Step 11 Ready to be served
On the day of Christmas, you can add icing on the top of your choice along with colourful sprinkles or chocolate chips and serve.
Tips :

Always cover your cake with some foil or baking parchment to avoid burning the cake at the top.

If you want to make the cake without alcohol, you can use fruit juices, flavoured syrups or even teas. Just make sure that the quantity is always less than alcohol.

You can always add spices as per your taste in the cake, but they should not overpower the true flavour of the cake.
